The story
At the four-star hotel La Borie d'Hélipse, just outside the village of Tournemire, Le Puy Tilleul offers a dining experience rooted in excellence and innovation. Chef Olivier Cloteau, who trained at the hotel school of La Rochelle and honed his skills in Norway and Canada, leads the kitchen with a passion for quality ingredients sourced from local producers. His cooking is delicate and subtle, often carrying a hint of the sea—a nod to his Charentais origins.
The restaurant is described as a space dedicated to "haute gourmandise," with an elegant and contemporary setting. Guests can choose from menus at €70, €100, and €130, or a Thursday and Friday formula of entrée/main or main/dessert at €47. The spacious dining room, with its soft natural tones, ensures privacy, and at night the illuminated Château d'Anjony becomes part of the view. In warmer months, the large terrace overlooking the park offers a stunning panorama of the medieval fortress.
For a truly exclusive experience, the "Table du Chef" seats just four guests inside the kitchen, where Chef Cloteau and his brigade present a six-course tasting journey based on their daily inspirations.
Le Puy Tilleul has been recognized by the Michelin Guide as a Recommended restaurant, a distinction that aligns with its commitment to modern cuisine and culinary excellence. Chef consultant Xavier Taffart, a Michelin-starred chef from Charente-Maritime, collaborates with Cloteau on the menus, reinforcing the restaurant's dedication to local producers and refined technique.
Open Thursday through Sunday, midday and evening, Le Puy Tilleul invites gourmets and epicureans to discover a cuisine that balances creativity with authenticity.
