The story
La Fourchette in Avignon is a story of three generations. It began in March 1960 with Josette and Robert Hiély, continued through Daniele and Philippe Hiély, and since May 2022 has been in the hands of Florine and Benjamin Hiély. The restaurant’s website captures the sentiment: “C’est une belle histoire qui continue… Avec vous !” The cosy dining room at 17 rue Racine is a welcoming space where the past meets the present, and the kitchen celebrates authentic, original French cuisine.
This commitment to quality has not gone unnoticed. La Fourchette holds a Michelin Recommended status, a testament to the consistent, thoughtful cooking that has been a hallmark of the house for decades. The award reflects the restaurant’s focus on fresh, seasonal ingredients and respect for tradition.
The menu changes with the seasons, drawing on the best of the Provençal market. Recent dishes photographed include “Le saumon en gravelax, betterave marinée et crème d’ail” and “Langue de veau confite sauce diable,” alongside a Savarin “fait maison” and a praline meringue with almond and caramel shards. The kitchen also gratinates Bouzigues oysters and prepares spring-inspired desserts, all with a clear emphasis on French cuisine that is both authentic and original.
La Fourchette works closely with local suppliers who share their values. Among them are Le Clos Méjean (fruit and vegetables), L’Oliveraie – Serge Olives, La Maison du bon café, and Maison Violette (bread). The restaurant even cultivates its own kitchen garden, enabling a true “voyage gustatif à travers les saisons.” This commitment to local sourcing reinforces the bistro’s place in the Avignon dining scene.
The team, led by Florine and Benjamin, includes pastry chef Tom and apprentice Alejandro. The restaurant is air-conditioned, pet-friendly, and offers takeaway service. It is a comfortable, unpretentious setting where the focus is squarely on the food and the pleasure of sharing a meal.
