The restaurant occupies a historic cardinal’s residence, and its dining room, the Salle Cardinalice, features a magnificent double coffered ceiling from the Renaissance. Chef Michele Donvito leads the kitchen with a philosophy rooted in generosity and a deep commitment to the region. He crafts tasting menus in three, five, or seven acts, each built around the bold, sun-drenched flavors of Provence. The menu honors the producers of the Vaucluse, where short transport distances allow for late-picked, sun-ripened fruit and vegetables, and exceptionally fresh fish. The result is a cuisine that feels both sophisticated and true to the land.
