The story
Just across the Spanish border from Bagnères-de-Luchon, in the mountain village of Bossòst, Er Occitan has earned a Michelin Recommended distinction for its thoughtful, modern cuisine. The restaurant’s philosophy is rooted in the Slow Food movement, a commitment to gastronomic pleasure that goes hand in hand with respect for tradition and the environment.
Chef Marcos Pedarròs Delaurens, born in Bossòst and trained at the Escola de Restauració i Hostelatge de Barcelona and the Lycée Hôtelier de Toulouse, builds his menus around locally sourced ingredients from the Val d’Aran, Ribagorça, Pallars, and the south of France. The result is a kitchen that fuses tradition with vanguardism, and a menu that changes with the seasons.
The tasting menu (€80) is a surprise journey through snacks, starters, fish, meat, and desserts. Signature dishes include a tartare of oysters and scallops with portobello mushroom and seaweed, and a slow-cooked duck with cumin-scented carrot foam. The wine list is extensive, carefully chosen to complement the cooking, and sommelier Nuria García Martínez (who holds a postgraduate degree in oenology) oversees the pairing.
The dining room is welcoming, with options for outdoor seating and wheelchair access. Er Occitan is open for lunch and dinner, and welcomes vegetarians and vegans with advance notice. The experience is designed to last about two to two and a half hours – a genuine, unhurried exploration of the Pyrenees on a plate.
