The Philosophy

The team behind Bistro de Montcaud speaks of the “luxury of simplicity.” This is a bistro in the truest sense: a place where locals and visitors alike gather for easy, honest cooking. The kitchen works with seasonal produce from nearby markets, letting the ingredients speak for themselves. The result is a bistronomic menu that feels both familiar and surprising.

The Chef

Chef Matthieu Hervé has led the kitchens at Château de Montcaud since 2018. His cooking blends the clarity of his Norman roots with the sun-drenched flavours of Provence. Before arriving here, he trained with world-renowned chefs; today his talent is recognised by both Gault & Millau and the Michelin Guide. While his fine-dining restaurant Le Cèdre de Montcaud holds a Michelin star, the Bistro earned a Michelin Recommended distinction in 2026—proof that this more relaxed table is equally accomplished.

The Menu

The carte is deliberately short but changes regularly. Classics such as côte de boeuf and bouillabaisse appear alongside dishes like pâté en croûte with duck and foie gras, or ceviche of gambas with sweet potato and lemongrass. At lunch, the weekly “Menu du Marché” offers a snapshot of the season’s best. For those who want the full experience, the Chef’s Menu (€58) includes amuse-bouche, starter, main, and cheese or dessert. Special themed menus—like the Fruits de Mer menu with half lobster and oysters—are announced in advance.

The Setting

The bistro sits within the park of Château de Montcaud, with a terrace that lets you dine surrounded by greenery. Inside, large windows frame the same view, while air conditioning keeps things cool in summer and a wood stove warms the room in winter. It’s a space designed for comfort, whether you are stopping by for a midday meal or a long evening dinner.
