A former grocery store, now a contemporary bistro

In the centre of Bar-le-Duc, an old épicerie has been transformed into a bright, colourful restaurant that feels both modern and welcoming. Bistro Saint-Jean is the project of chef Jean-Christophe Cordel, who opened his own place in 1998 after training in the kitchens of Jacques Maximin, Guy Savoy, Bernard Loiseau and Alain Ducasse. The setting is warm and comfortable, with a decor that the Petit Futé guide calls “colorful and elegant” – a fitting backdrop for the precise, seasonal cooking that follows.

Market cuisine, renewed daily

Cordel works with a short, ever-changing menu: three starters, three mains, three desserts, all built around the best produce of the day. This is a cuisine du marché in the truest sense – no fixed carte, just what is fresh and inspiring. The Michelin inspectors note “a careful market cuisine, in tune with the times, renewed daily,” and point to a confit pork breast with braising jus and pearl onions as an example of the kitchen’s respect for ingredients. Classic dishes like foie gras and a piece of beef remain regulars, but the spirit is always seasonal and responsible.

Bistro Saint-Jean holds a Michelin Recommended distinction and a 13.5/20 rating with two toques from Gault&Millau, which describes Cordel as “going it alone” in Bar-le-Duc, offering gastronomic plates compressed into a 46€ menu. The guide highlights an egg cooked at 64°C with seafood and bouillabaisse jus, steamed pike-perch with baby vegetables and emulsion, and a rare beef fillet with morel and oyster mushroom cream. The Bottin Gourmand praises the short but attractive wine list, focused on Burgundy. For over twenty-five years, this bistro has been a reliable address in the region – a place where modern cuisine is executed with skill and without fuss.
