The story
L'Unisens sits in the quiet village of Vagnas, just a few minutes from Vallon Pont d'Arc in the Ardèche. Chef Tarik Mezri-Charmasson runs this modern cuisine restaurant, but the story begins decades earlier. His grandfather, Léonce Charmasson, founded the Auberge des Granges here in the 1970s, a place known for generous, terroir-driven cooking. When the restaurant closed twenty years ago, the building sat empty until Tarik decided to revive it.
Before returning, he trained with the Pourcel brothers at Le Jardin des Sens and worked in Luxembourg, then earned his stripes at Michelin-starred houses like Mas des Herbes Blanches and Phébus. That experience gave him the confidence to reopen the family auberge under a new name: L'Unisens.
The dining room is warm and elegant, with outdoor seating for the Ardèche summers. The menu changes with the seasons, built around local produce and subtle, creative combinations. The Michelin Guide has recognised this modern cuisine repeatedly, noting the chef’s ability to honour his roots while pushing flavours forward.
