The story
In 2018, Cindy and Benoit took over a traditional Savoyard chalet, the Gîte de la Charmette, in the mountain village of Arêches-Beaufort. Their vision was clear: transform the space into a restaurant and guesthouse that reflects their own style — modern, warm, and refined — while keeping the genuine character and conviviality that had always defined the place.
The result is Les 9 Névés, a year-round destination in the heart of the Beaufortain mountains. The name itself comes from a local saying about snow patches on the Roche Parstire — a nod to the alpine landscape that surrounds the house.
Chef Benoit’s cooking is firmly grounded in the land. His menus are built around raw, seasonal ingredients sourced from a tight network of nearby producers: cheeses from local dairies (Gaec du Bochon, La ferme des Riondons, the Beaufort cooperative), vegetables from Les Jardins du Praz and Croc Local, and meats from small farms like Gaec de la Fontaine and Salaison du Charvin.
Nothing is wasted — meat, fish and vegetables are used in their entirety, and green waste is composted. It’s a kitchen that values respect for ingredients as much as creativity. The style is modern and precise, delivering what one guest described as “plates worthy of a gastronomic restaurant, a treat for the eyes and the taste buds.”
Michelin has taken note, awarding Les 9 Névés its Recommended distinction, a fitting recognition for Benoit’s thoughtful modern cuisine in this mountain setting.
The chalet has been carefully renovated, with five guest rooms that are both charming and comfortable. The dining room and terrace offer views across Arêches and the surrounding peaks. Guests praise the generous, locally sourced breakfasts and the warmth of the welcome from both Cindy and Benoit.
