The story
In a former bourgeois mansion in the center of Beaune, Garum is a place that feels both elegant and alive. It is the creation of Chef Christophe Bocquillon, who spent eight years at the helm of the Michelin-starred Le Jardin des Remparts—the very restaurant that occupied this building for three decades. Seeking more freedom and a different way to share his cooking, he reimagined the space as a stylish, welcoming bistro.
The atmosphere is described as chic and trendy, with three colorful rooms and a grand bar that feels like it belongs to another era. In warmer months, the stunning terrace becomes the heart of the action. The restaurant’s modern cuisine is designed to be shared and enjoyed without pretension—"sans chichi, ni tralala," as they say locally. The menu changes with the seasons and the chef’s whims, but you can expect dishes full of real flavor: a Charolais beef tartare, roasted free-range pork belly, and cromesquis of snails. There are also exceptional cuts of meat and fish, carved tableside.
What truly sets Garum apart is its secret workshop in the cellar. There, like a "mad scientist," the chef crafts his own ferments, vinegars, and dry-aged charcuterie. At the heart of it all is the namesake garum—the ancient, savory fish sauce that lends its name to the restaurant and adds a unique depth to the plates. The wine list is equally considered, offering everything from small-producer bottles to prestigious Burgundy crus, alongside a wide selection by the glass.
Garum is a restaurant with a soul: a place for good conversation, good music, and beautiful, honest cooking. It is a recognition well earned by the Michelin guide, which highlights it as a Recommended address in Burgundy.
