The story
La Ferme de la Ruchotte delivers season-driven French haute cuisine from a quiet estate just outside Beaune. Chef Frédéric Ménager traces every plate back to his own soil. After working as a rotisseur for Pierre Gagnaire and sous-chef at Alain Chapel, he returned to the Côte d’Or to raise heritage poultry and tend vegetable plots. He designs the daily menu around what leaves the pen that morning. This hands-on approach to classic French cooking earned a listing in Le Fooding 2026.
The nine-course Vol-au-Vent tasting menu honors eighteenth-century bourgeois cooking with precise modern technique. Crayfish bisque opens the service, followed by a truffled veal quenelle and roasted sweetbreads glazed in truffle jus. A pressure-cooked nine-month-old poultry arrives alongside a pan-seared pikeperch prepared using the ikejime method. Chilled beet ice cream salads and poached pears with fresh verbena close the meal.
The estate sits in the Ouche valley, where the dining room accommodates twenty to thirty-five guests each lunch. Service runs Wednesday through Sunday, leaving weekdays for fieldwork and recipe testing. The wine cellar focuses on Burgundy appellations chosen to complement garden-driven dishes without overwhelming them. Guests step out between courses onto the terrace to watch the same plots that supply the kitchen.
