The story
In a handsome Henri IV-style house on Place Carnot, Le Carmin is a quiet address for modern cuisine in Beaune. Chef Christophe Quéant, a grandson and great-grandson of pastry chefs, trained with Joël Robuchon and Alain Ducasse before opening his own restaurant in 2012. He first ran the kitchen at the Château de Pommard, then moved with his wife Nathalie into the Beaune building they now call home.
Quéant describes his cooking as instinctive and authentic, driven by the seasons. He sources each product carefully, favoring short supply chains and letting the ingredients speak. "I like to cook without artifice," he says. "If I put a flower on a plate, it has to bring something real." The result is a market-driven menu that changes regularly, built on produce, texture and honest technique.
The dining room is light and calm, decorated by Nathalie in pale tones that create a serene, intimate atmosphere. It is the kind of space that lets the food take center stage. The restaurant holds one Michelin star, a recognition of the high quality of cooking that Quéant delivers day after day.
Le Carmin serves lunch and dinner from Tuesday evening through Saturday, with a short ordering window — noon to 1:15pm for lunch, 7pm to 8:30pm for dinner. The restaurant is closed Sunday, Monday and Tuesday lunch. Reservations are made through the website. The wine list is interesting, and there is outdoor seating for warmer months.
