The story
In the heart of Beaune’s historic centre, just steps from the Hospices, L’Expression is the story of a reunion. Chef Damien Ravion, formerly of the Bistrot de l’Hôtel de Beaune, and Jérémie, a passionate sommelier, joined forces to create a restaurant rooted in authenticity and shared taste. Their modern cuisine is built around one elemental technique: cooking over a charcoal fire at very high temperatures. Vegetables and meats are seared to a crisp finish, releasing deep, inimitable aromas.
The dining room sets the tone for generosity. Custom-made solid oak tables invite sharing: a Galician côte de bœuf is served for two or three, alongside roasted vegetables and indulgent desserts. The atmosphere is elegant without pretence, warm and welcoming. Vegetarians are thoughtfully catered for, and the restaurant opens on Sundays—a rare find in Beaune.
L’Expression has earned a Michelin Recommended distinction, confirming what locals and visitors already know: this is a table where the spirit of Burgundy meets a bold, contemporary flame. The wine list, curated by Jérémie, is as interesting as the food, making every meal a complete expression of terroir and craft.
