Since opening in October 2019, Restaurant Côté Marais has established itself as a destination for refined, inventive modern cuisine in the Vendée. The restaurant’s philosophy is rooted in a close relationship with the land: the menu changes monthly with the seasons and is built entirely around carefully selected local products. As the chef puts it, “the unexpected is always more beautiful than the things we planned.”

The atmosphere is deliberately understated and welcoming. The dining room is sleek and calm, while a covered terrace opens onto the garden, making it an inviting spot for both lunch and dinner. The team places great emphasis on service, aiming to make every guest feel at ease. The restaurant also offers a private room that can host up to 50 guests indoors, with additional space for 40 on the covered terrace.

The menu offers a range of options. On weekday lunchtimes, there is a single changing slate (entrée, plat, dessert) starting at €25. For evenings and weekends, the focus shifts to tasting menus: a 3-service option at €45, a 4-service at €59 (entrée, fish, meat, dessert), and a 5-service at €68 that includes a cheese trolley. The kitchen adapts its cuisine to what nature provides at that moment, ensuring the best product is used at its peak.

The quality of the experience has been recognised by the Michelin Guide, which now recommends the restaurant. This nod from the guide underscores the kitchen’s commitment to both tradition and creativity, offering an authentic gastronomic experience without pretension. A customer review on the restaurant’s site captures the spirit: “Beautiful plates with flavour. Very fine service. Watch out, stars could well shine in the MARAIS!”.

Beyond the dining room, Côté Marais offers a takeaway service and outside catering for events. A vending machine outside the establishment also provides local products, from local fish to organic French vegetables, reflecting the restaurant’s ongoing commitment to its producers and the local environment.
