The story
In the quiet countryside of Colombières-sur-Orb, near Bédarieux, brothers Benjamin and Clément Bonano have created Granit, a restaurant awarded a Michelin star for its high-quality cooking. The name is fitting: their cuisine is built on a foundation of solid technique, with a playful, contemporary edge.
The brothers’ path to this hillside spot is anything but provincial. Their shared roots are Italo-Hispanic, and their parcours includes stints at L’Auberge de Combes, Le Jardin des Sens in Montpellier, Le Ritz Paris, W’sens London, Les Maisons de Baumanière, and Le Caprice Four Seasons Hong Kong. At La Mécanique, they have returned to the terroir of the Hauts Cantons de l’Hérault, bringing a world of experience to a local table.
At Granit, the guiding principle is "pas de monotonie" — no monotony. The menu changes with the seasons and the chefs’ whims, always rooted in the surrounding landscape. The signature Minéral menu (€125) offers a full tasting experience, while the Saltimbanques 3.0 lunch menu (€85, Thursday and Friday) provides a more accessible entry point with snacks, starter, main, and dessert. Wine pairings are available for both, with the "Globe-Trotter" and "Influences méditerranéennes" options respectively, reflecting the brothers’ global perspective.
The atmosphere is one of rigorous yet relaxed service. The dining room opens onto a park with views of the Caroux mountain range and the Madale river, allowing the surrounding nature to become part of the meal. The wine list is curated with care, essential for the juxtaposition and harmonization of flavors in each dish.
Granit is the gastronomic heart of a larger project called La Mécanique des Frères Bonano, which also includes a convivial bistro, Trou du Kru, and several guest rooms and suites for those wishing to extend their stay.
