The story
In Bédoin, at the base of the iconic Mont Ventoux, La Colombe welcomes guests into a calm, light-filled space surrounded by nature. The atmosphere is elegant yet warm, with a terrace that overlooks the vineyards—a setting the Michelin Guide describes as inviting you to "head to the shaded terrace overlooking the vines." It is a place where modern Provençal cuisine comes alive, rooted in the local terroir and the seasons.
Christophe Schuffenecker leads the kitchen with a perfectionist’s touch. His career includes two Michelin stars: first in 2014 at La Table de l’Alpaga in Megève, then in 2021 at Château de Mazan in the Vaucluse. At La Colombe, he crafts a modern, precise style that the Michelin Guide calls "impeccable, without superfluous fuss." He works exclusively with fresh, local produce, drawing on aromatic wild herbs and plants gathered nearby. "I love to elevate what is best in the region on the plate," he says, and his dishes reflect that commitment—such as the pigeon of Sarrians with carrot purée perfumed with geranium, singled out by Michelin.
The menu is a journey through the Provençal landscape. The Randonnée du Mont Ventoux (48€) offers three steps, including a slow-cooked farm egg with truffle and roasted celeriac, or larded monkfish with cabbage. The Ascension du Mont Ventoux (78€) expands to five courses, featuring a velouté of pumpkin and Ventoux truffle, and a clementine dessert with marmalade and sorbet. A group menu, the Petite Randonnée (38€), is available for parties of 16 or more. Every dish is built around seasonal products from local producers, and the restaurant also offers a carefully selected wine list with pairings from nearby domains.
