The story
In Bernières-sur-Mer, on the “Terre de Nacre” coast between the salt marshes of Courseulles and the sea, L'As de Trèfle is a restaurant of two atmospheres: a gastronomic dining room and a veranda for a more spontaneous “coup de cœur” menu. The tone is set by a recently renovated décor in natural materials, a refined space that reflects the restaurant’s commitment to the environment.
Chef Anthony Vallette, a native of the Norman bocage, brings a deeply personal vision to the kitchen. His is a creative, eco-responsible modern cuisine that pays homage to the contrasts of Normandy. Vallette works products in their entirety, exploring textures and cooking methods with a particular focus on the sea—seaweed, broths, and the layered flavours of the English Channel. He draws on solid experience in Michelin-starred houses, notably under the mentorship of two-star chef Stéphane Carrade in the South West of France.
The menu is built around authenticity and the integrity of taste. The restaurant offers several paths for the evening, including a tasting menu, a “REVELATION” menu, and a market-driven “Retour du Marché” option. The restaurant’s philosophy is one of truth and cross-pollination, anchored by local producers and a deep respect for the Norman terroir. This approach has earned L'As de Trèfle a place in the Michelin guide, recognized as a Recommended address for its clear, confident cooking.
