The kitchen’s modern cuisine is evident in dishes like the fine tranche de tête de veau with green lentil salad and gribiche sauce, or the cannelloni of lightly smoked trout with ratte potato purée and spinach. A standout starter is the duo of duck foie gras—one confit in Pinot Noir, the other cooked in a torchon with Gewurztraminer Vendanges Tardives. The wine list draws from Alsace and all major French vineyards, selected to complement each course.
