The story
In the Rivotte quarter of Besançon, at the foot of the UNESCO-listed Citadelle de Vauban, Le Manège occupies a former 18th-century military riding school. This history gives the place its name and its character. Since opening in 2004, chef Jean-Charles Lavier and his team have been turning out a style of modern cuisine that the restaurant describes as simple, refined, and generous.
Everything is made in-house, from bread and ice creams to juices and sauces. The kitchen follows the seasons and prioritises French produce, paying careful attention to cooking techniques.
