On the banks of the Loire, in the Vienne district of Blois, Brut Maison de Cuisine brings a thoughtful, ingredient-driven approach to modern cuisine. The restaurant has earned a Michelin Recommended distinction for its precise technique and commitment to local, responsible sourcing.
The kitchen works with short supply chains, favouring organic and seasonal produce from small farms and artisans. This “cuisine de producteur” means every element on the plate – from vegetables to meat and fish – is chosen for its quality and origin. Dishes change regularly to reflect what is at its peak, prepared with a refined touch that preserves natural flavours while adding subtle layers of texture and taste.
One signature is the artichoke and chicory tart, a dessert the chef previously refined at the three-Michelin-starred Le Clos des Sens in Annecy. It combines an ethereal meringue, a crystalline granité, and an airy siphon, all built around an intense chicory infusion – a play of elegant bitterness and gentle sweetness. Another regular is the cauliflower served in multiple textures: a smooth purée, a reduced jus, caramelised roasted florets, and bright pickles for acidity. This vegetarian plate demonstrates the kitchen’s ability to transform a simple vegetable into a complex, satisfying experience.
Wine is an integral part of the experience at Brut. The selection focuses on artisanal, organic, and biodynamic estates. Recent additions include Domaine Plageoles from Gaillac, with its rare Mauzac and Ondenc grapes, and Domaine de la Tournelle from the Jura, offering everything from a lively Ploussard to a complex oxidative Savagnin. The team regularly updates the list, pairing each bottle with the season’s flavours.
The dining room on Quai Villebois-Mareuil is modern and comfortable, with outdoor seating for warmer months. Service is attentive but relaxed, reflecting the restaurant’s philosophy: refined food without formality. Private parties and catering are also available.
