The story
At the Auberge du Vert Mont in Boeschepe, the philosophy is one of return to essentials. The kitchen, recognized with a Michelin star for its high-quality cooking, crafts a cuisine that is "both raw and delicate, wild and accessible." There is no à la carte menu here. Instead, diners are invited to place their trust in the chef, choosing between two blind tasting menus: the "Petite balade" (available at lunch) or the more extensive "Expérience totale" in the evening.
The cooking is built around the rhythm of the seasons and the local producers who surround the inn. Every ingredient is chosen with exacting care, each plate telling a story born from the Flemish territory and the chef's inspiration of the moment. This creative freedom is central to the experience, and to preserve it, the menus remain fixed. Any dietary adaptations must be communicated at the time of booking.
The atmosphere is one of simple, grounded pleasure, where nature takes its place at the table. The Auberge du Vert Mont offers a modern cuisine that is both primal and refined, a true expression of its place on the Mont Noir.
