Since opening his own house in 2024, Chef Alexandre Baumard has drawn a clear line from his training with masters like Benoît Vidal and Christophe Bacquié straight to the heart of Bordeaux’s Grands Hommes district. At 19 rue Mably, he operates two distinct experiences under one roof: the gastronomic La Table AMICIS and the more casual La Table des Amis. The name itself means “friends” in Latin, and the concept is built around that idea—a place for regulars and first-timers alike.
Baumard’s cuisine is resolutely market-driven and turned toward the sea, never forgetting the terroir of Aquitaine. His personal credo is simple: one product, one sauce, the taste. Each dish is built around a carefully chosen ingredient at full maturity, lifted by a condiment or a note of acidity. At La Table AMICIS, a tasting menu in seven stages presents this philosophy at its most refined. Downstairs, at La Table des Amis, the midday menu offers a bistronomic, market-fresh lineup.
Pastry chef and co-owner Damien Amilien, a Gault & Millau award-winner for Nouvelle-Aquitaine, brings the same precision to desserts. His chocolate soufflé with roasted vanilla—a signature—balances the deep cocoa with a touch of acidity from mucilage and a caramel finish.
The precision and warmth of Baumard’s cooking earned Amicis a Michelin star in 2025, just one year after opening. The recognition feels earned: the kitchen is led by Chef de cuisine Jordan Vallée, who has worked alongside Baumard since 2020, and the atmosphere moves from the animated buzz of the bistrot terrace to the quieter, intimate upstairs dining room.
