The story
At Bo-tannique in Bordeaux, three partners share a common dream: to create and share their cuisine. Chefs Florent and Romain, along with sommelier Guillaume, trained under Joël Robuchon, Guy Savoy and Alain Pégouret. This heritage is evident in their precise cooking, textures and flavours. Their Michelin Recommended status, awarded in 2026, reflects the quality they bring to the table.
Bo-tannique describes its food as “cuisine de grande tradition with world touches”. Asian and Modern Cuisine meet here: salmon with Tahitian condiments, Thai coconut soup, aged beef rib with pepper and fresh mint, or spiced-crusted sea bream. The influences draw from Polynesia, India and Asia – places they have explored through their travels.
The menu changes each season, offering four starters, four mains and three desserts, plus a discovery menu at €45, a theme menu at €65, and a tasting menu at €80. At weekday lunch, a chalkboard menu offers two or three courses for €23–€25. The kitchen emphasises local produce and short supply chains, aiming for exceptional food at a reasonable price.
Guillaume curates a cellar dedicated to author and natural wines, representative of French terroirs and chosen with an eco-responsible approach. The wine list is a focal point, designed to complement the globally inspired dishes.
Bo-tannique serves its refined, nomadic food in a spirit of conviviality and sharing. The team also caters for private parties, events and chef-at-home services. Housed in the historic city centre at 2 rue Tustal, the restaurant is open from Tuesday midday through Saturday evening. With outdoor seating, wheelchair access and a takeaway option, it welcomes all who appreciate thoughtful, well-sourced modern cuisine.
