The story
Déméter approaches the classic bistro model from its address in Bordeaux, guided by Gary Village and Guillaume Le Goff. The duo previously trained at Echo and Chiocchio, which established a shared technical language before they opened this venue. They work alongside Léa Lemaitre and Aurore Dourguia Piochés in the pass, executing a program built around seasonal availability and short supply chains. Lunch operates on a strict structure of two appetizers, two mains, and two desserts. The kitchen serves tender leeks mimosa dressed with bright vinegar, followed by short ribs braised until soft over a smooth parsnip purée. A generous pour of meat jus and a side of watercress cut through the fat before a cream puff filled with whipped cream and clementine jam closes the meal. The dining area retains the high volume of the former Mampuku location, offering seating at the counter, the main salon, or the upper floor.
