Ishikawa: A Taste of Tradition in Bordeaux

In the heart of Bordeaux, at 22 rue du Hâ, Chef Yugo Ishikawa runs his own restaurant, a place where Japanese culinary tradition meets the best of the region's local produce. After honing his skills at the traditional Japanese "Kinbei" in Ginza, Tokyo, Chef Ishikawa moved to Bordeaux in 2007. There, he deepened his knowledge of Southwestern French ingredients before opening his own establishment with a clear vision.

"I hope you will savor our authentic dishes that delight the body and the heart," Chef Ishikawa writes, "and above all, discover a true, unique Japanese cuisine in Bordeaux." This philosophy is evident in every plate. The kitchen follows the seasons, preparing a vast array of local seafood and land products with meticulous Japanese techniques to highlight each ingredient’s natural qualities.

The restaurant's Japanese cuisine is explored in both lunch and evening services. At midday, diners can choose the Teïshoku menu (a main course with dessert or coffee) or the more elaborate Gozën, which begins with five kobachis—small, delicate side dishes essential to Japanese dining. Evening service presents a tasting menu, an exploration of textures and temperatures: it opens with an amuse-bouche, followed by kobachis and sashimi, then a seasonal vegetable tempura, a fruit granité, a choice of main dish, and a dessert. A supplementary option of three sushi pieces is also available.

That Chef Ishikawa has been recognized with a Michelin recommendation is a testament to the quiet dedication and authenticity of his work. The dining experience is complemented by a selection of sakes and wines, and outdoor seating is available on the terrace. For those who prefer to dine at home, Ishikawa offers a takeaway service of bentos and dishes. The restaurant is open for dinner Tuesday through Saturday, and for lunch Wednesday through Friday.
