The story
Le 1544 occupies the first floor of Le Gabriel, the grand 18th-century building that anchors Place de la Bourse, facing the Miroir d’Eau and the Garonne. The space is warm and intimate, with exposed beams, vegetal decor, and a relaxed atmosphere that feels like a retreat from the bustling square. It is one of three culinary concepts within Le Gabriel, each overseen by executive chef Bertrand Noeureuil.
Bertrand Noeureuil took the reins of Le Gabriel in December 2023, returning to his native southwest after a decade spent alongside Yannick Alléno and Arnaud Donckele at Cheval Blanc’s three-Michelin-starred restaurants. At Le 1544, he applies that exacting technique to a more convivial, unpretentious style. The menu is described as “régressive” – deliberately nostalgic, rooted in the flavours of the Aquitaine terroir. The Gabriel’s own farm, La Ferme 1544, supplies ingredients grown with reasoned agriculture and short supply chains, reinforcing the connection to the land.
