The story
At the gates of Bordeaux, in Lormont, Le Prince Noir occupies a 17th-century château classified as a historic monument. Facing the Garonne and the Pont d’Aquitaine, the dining room is bright and contemporary, with clean lines and wide views over the park. The atmosphere is elegant and intimate, open to the surrounding nature.
Chef Vivien Durand opened Le Prince Noir in 2014. Within nine months, the restaurant earned its first Michelin star. The kitchen is driven by a philosophy the team describes as “strong and committed cuisine” that revisits classic codes with generosity. Durand’s approach is precise and inspired, working in harmony with the seasons and local terroirs. In 2020, the restaurant was awarded a Michelin Green Star, recognising its dedication to sustainable gastronomy.
The menus are built around eight services, conceived as a bespoke culinary itinerary where textures, contrasts and subtleties intertwine. The Menu Signature gathers the chef’s emblematic dishes over the years. A dedicated Menu Végétal celebrates botanical richness, while the Menu Expérience offers ephemeral, audacious creations. Wine pairings and non-alcoholic pairings—featuring exclusive brews made in-house—are available for each option. A shorter Menu Découverte is offered at lunch.
The restaurant’s modern cuisine is also expressed through cultural projects. Chef Durand launched a web series, Les P’tits Plats dans l’écran, in which he reinterprets iconic film dishes. He has participated in the Science & Cooking World Congress in Barcelona, speaking on sustainable gastronomic development, and has cooked at the LURRAMA festival. His career includes a Gault&Millau d’Or for Nouvelle-Aquitaine in 2024 and a world champion title in the Pintxos competition in San Sebastián in 2009. In 2023, he took part in a major culinary project at the Musée du Louvre alongside Alain Ducasse and other leading chefs.
The restaurant also offers private dining, chef’s table experiences, and culinary classes. The service is attentive and discreet, following a fluid protocol that supports each moment of the meal with precision. Le Prince Noir is open for lunch and dinner from Tuesday to Friday.
