The story
Since October 2022, François and Sarah Sauvêtre have been the proud owners of L'Oiseau Bleu, a restaurant François has led as Chef de Cuisine since July 2018. His path to this kitchen was forged in the grands palaces of Paris—the George V and the Bristol—before he became Chef Adjoint at Les Sources de Caudalie in Martillac under Chef Nicolas Masse. In January 2020, his work earned the restaurant a Michelin star, a recognition it continues to hold for its "high quality cooking."
Chef Sauvêtre describes his cooking as a "cuisine d'instinct, libre et gourmande, une cuisine de goût" — instinctive, free, and generous. This modern French cuisine is rooted entirely in seasonal products. The menus are created in close partnership with passionate local producers, primarily from short supply chains. The result is a tasting experience built around the best the region has to offer.
The restaurant offers several tasting journeys, including "La Balade de saison," "Le Plaisir des sens," and "L'Envol," each designed to showcase the produce of the moment.
