The story
Maison Musubi channels Japanese cooking into a compact Bordeaux setting where chef Ayako Ota commands the kitchen. Her background spans established local tables at Miles, Mampuku and Massa before she launched this project with partner Marie-Pierre Munoz. The name translates to connection in Bashō’s poetic tradition, guiding how ingredients meet guests across the room. Ota approaches each plate with restrained technique, letting precise seasoning carry the weight of simple components.
The menu rotates around the region’s harvest, which shows clearly in the kare raisu that draws consistent attention. Squash and potatoes simmer alongside pickled enoki mushrooms, while a marinated egg rests atop the rice. Diners receive small accompaniments like grated carrots tossed in peanut sauce or a crisp white cabbage salad. Stewed chicken braised with salted plums and mirin completes the savory lineup.
A single ornate counter anchors the dining room, leaving just enough room for sixteen guests to watch the service unfold. Marie-Pierre Munoz manages the floor and handles the takeaway orders that keep the space running smoothly. The narrow footprint forces every interaction to feel direct and unhurried. Patrons settle in without pretense, trading quiet conversation over steaming bowls while the kitchen maintains a steady pace.
