The story
Maison Pavlov opened in August 2021, the heart project of Mary Henchley and Maxime Rosselin. Located in Le Bouscat, minutes from central Bordeaux, the restaurant is set within a beautifully restored five-star boutique hotel. The property is a chartreuse, surrounded by a lush garden that supplies the kitchen with flowers, aromatic herbs, and fruits.
The restaurant shifts its personality with the clock. At lunch, Tuesday through Friday, it runs a bistronomic "return from market" menu, driven by season and the chef's daily inspiration. In the evening, Tuesday through Saturday, the tone becomes gastronomic. On Sundays and Mondays, a convivial "Entre Terre & Mer" carte takes over, designed for sharing in the serene garden or dining room. The approach is modern, refined, and respectful of the local ecosystem, using produce from the hotel's own garden and honey from nearby hives. The kitchen's bond with the land is tangible.
