In the heart of Bordeaux, OST occupies an old wine cellar with stone vaults, a setting that blends raw authenticity with careful detail. The atmosphere is warm and relaxed, yet the kitchen maintains a rigorous standard. Everything is made in-house from fresh, local, seasonal ingredients.

The cooking is current, creative, and audacious—designed to surprise, challenge, and comfort. Flavours cross borders without pretence, and the menu changes with the seasons and the team's inspirations. This approach has earned OST a place among Michelin's Recommended restaurants, a recognition of its confident, modern cuisine.

Starters might include octopus carpaccio with calamansi, ‘nduja, and sea asparagus, or gnocchi with cured egg yolk, vin Jaune cream, and crispy guanciale. Mains range from local duck breast with a smoked glaze, split peas, and bimi, to a barley risotto with a plant-based blanquette sauce, sunchoke, and eryngii. For two, there is a veal Cordon bleu with Morbier and speck, or a sharing cut of meat sourced according to availability.

Desserts are equally considered: a poached pear with chestnut cream and brioche perdue, or a chocolate cookie with Kalamata olives and salted caramel. The experience is meant to be shared, whether over a vibrant plate or a glass of good wine, in a space that feels both unpolished and refined.
