The story
Panaille is the project of three friends in their early thirties: Manon Cazes, Martin Lafont, and Jean-Marie Perrot. After training in prestigious institutions and alongside renowned chefs, they traveled, brainstormed, and tested their way to a shared vision before settling in Bordeaux. The result is a restaurant that feels both accomplished and personal.
The atmosphere is described as "cosy" and "décontractée" (relaxed), with an efficient team that makes the experience welcoming. The dining room is a comfortable space where the focus stays on the plate.
The menu at Panaille changes every week, encouraging regulars to rediscover the kitchen's work. The Michelin guide notes that the cooking is "réglée au cordeau" (meticulously precise), navigating between traditional recipes and travel-inspired incursions into Asian and South American flavors. This is modern cuisine that respects its roots while looking outward.
Everything is made in-house, from the bread to the final garnish. The format is simple: a weekly menu that evolves with the seasons and the team's creativity. There are no set dishes to memorize, just a single, thoughtful offering that changes as often as the inspiration behind it.
Panaille holds a Michelin Bib Gourmand, an award for good quality, good value cooking. This recognition aligns with the restaurant's philosophy: refined, well-executed food without the formality or price tag of a starred establishment. It is a place where the precision of high-level technique meets the warmth of a neighborhood spot.
