A Discreet Setting

Passage Secret lives up to its name. Tucked inside the Passage Sarget, a covered arcade from the 1800s in Bordeaux’s Golden Triangle, the restaurant transforms after dark. By day a convivial gallery, by night it becomes an intimate dining room with a hushed, elegant atmosphere. A secret terrace under soft lights, red carpet, and spaced tables offers a nocturnal bubble for quiet enjoyment. Upstairs, a simple room with artisan wooden tables continues the understated charm.

Chef Thomas Pasquereau

Behind the stove is executive chef Thomas Pasquereau, a career built over twenty-five years in French gastronomy. He has cooked at the French Embassy in Cambodia, served as head of catering for the Republican Guard in Paris, and later taught at the Ferrandi culinary school in Bordeaux and Rennes. At Passage Secret, he presents a personal interpretation of classic cuisine, elevating great French classics with a contemporary, sensitive touch. His cooking balances heritage and modernity, with precision, emotion, and creativity.

Classic Cuisine, Modern Expression

The kitchen draws on local, seasonal produce and a deep respect for traditional French technique. Sauces are central: sauce Foyot, sauce Choron, sauce maltaise – old-school preparations that Pasquereau revives with confidence. A signature dish is the mushroom-caviar: sautéed oyster mushrooms, lacquered shiitakes, brown mushrooms from a local farm, caviar, flambéed leek, and black lemon cream. Fresh sturgeon confit in fir oil comes with a herbaceous sauce using Izarra liqueur, trout roe, bottarga, and green asparagus. The menu also includes a vegetarian gastronomic option, and personalised wine pairings or house-made drinks.

The Michelin Guide has recognised Passage Secret with a Recommended status, praising its “cuisine d’inspiration classique à l’exécution remarquable” and noting a pâté en croûte façon Richelieu that “forces admiration.” The guide calls it “une adresse encore confidentielle à découvrir à Bordeaux avant qu’elle ne s’ébruite” – an address still secret, best discovered before word spreads.
