Testa Dura brings its award-winning pizza craft to Bordeaux through three École Ferrandi graduates who first mixed flour under Bartolo Calderone. Carolina Paradiso, Hugo Lipsky, and Maxime Gourgues channel that classical training into a strictly natural approach. Every base relies on a living sourdough starter and heritage Rouge de Bordeaux wheat. This deliberate foundation gives the crust its characteristic puff and chew before it ever touches the heat.
The kitchen bakes every pie directly over a roaring wood fire, pushing the dough into an imperfectly perfect round. Guests frequently order the cacio e pepe version, where sharp pecorino, melted scamorza, and coarse black pepper coat the surface. Other notable builds pair squash with guanciale and sage butter, or layer tripes with gremolata and fresh mozzarella. Even the vegetable selections like yellow courgette with almonds stay rooted in straightforward Italian pizza making.
