The story
Belliou La Fumée serves traditional Savoyard cuisine in Bourg-Saint-Maurice, operating from a former Duchy of Savoy hunting lodge restored by Gilbert Merie after the 1968 resort expansion. His son Jean-Pierre and wife Annie took over the kitchen in 1985, establishing a mountain cuisine built around regional suppliers and straightforward preparation. The stone and timber building sits directly below the Pré Saint-Esprit lifts, where a riverside location and central hearth define the space. That consistent family approach earned recognition on the 2026 Le Fooding guide.
The kitchen relies on live flame to grill Hereford beef ribs and fennel-seasoned sea bream, serving both alongside roasted root vegetables. Sauces are drawn down from house-made stocks, allowing ingredients like toasted shiitake mushrooms and creamy Beaufort reductions to take center stage. Black truffle from Mélanosporum finishes a slow-baked egg cocotte, while Dauphiné ravioli absorbs a rich cheese sauce. These techniques reflect a commitment to unpretentious French alpine cuisine.
Guests choose between the sunlit outdoor terrace and the enclosed dining room, where exposed wooden beams and a working fireplace maintain a steady warmth throughout winter months. The layout encourages lingering, especially after meals when homemade Mövenpick ice creams and a Génépi-infused crème brûlée provide a gentle finish. A dedicated children’s menu featuring carbonara tagliatelle and braised cod ensures the space remains practical for families navigating the slopes. The riverside proximity adds a quiet soundtrack to an otherwise bustling service period.
