The story

Chez Mérie in Bourg-Saint-Maurice: A Le Fooding Recognized Mountain Kitchen

The chef and the kitchen

Recognized by Le Fooding for its steady output, Chez Mérie in Bourg-Saint-Maurice draws travelers off the main highway for Savoyard cooking. Marie Mérie runs the kitchen alongside her sister and daughter, turning a simple stone and wood chalet into a reliable stop for winter visitors. Her approach favors slow braising and garden harvested herbs over complicated techniques. The family preserves regional methods while keeping the service relaxed enough for tired skiers.

Seasonal plates and local produce

The menu centers on substantial dishes built around straightforward preparation. Braised legs of lamb rest slowly near the hearth until the meat releases cleanly from the bone. They arrive alongside a dense gratin dauphinois that matches the reputation of the area. Guests can also order Savoie trout grilled whole over direct heat, finished with watercress and fresh herbs from the garden. Flambéed escargots dressed with Pastis des Alpes offer a sharper note beside the rich meats typical of alpine cuisine.

The chalet and the bar

Large wooden tables fill the dining space, creating a communal layout that suits groups arriving after long days on the slopes. Animal pelts line the floorboards and soften the acoustics of the stone walls. Marie’s daughter handles the bar program, mixing seasonal drinks like the Sapin cocktail that combines conifer infused liqueur with elderberry and ginger ale. The evening closes with a Génépi infused crème brûlée that echoes the herbal notes found throughout the valley.

Between Bourg-Saint-Maurice and Val-d’Isère, Marie Mérie has travelers making a detour from their typical mountain route to her impressive stone and wood chalet. While her sister welcomes guests and her daughter shakes up the cocktails – such as the topical Sapin (made with a conifer-infused liqueur, elderberry and ginger ale), the owner watches over the braised legs of lamb near the fireplace. And what legs of lamb they are! Share them on big wooden tables surrounded by animal pelts, and served with one of the world’s best gratin dauphinois! Some other options: a handful of escargots that have been flambéed with Pastis des Alpes; excellent Savoie trout grilled whole, served with vegetables, watercress and herbs from the garden; and the inevitable Génépi-infused crème brûlée. // A.S.
