The story
In the small Isère village of Maubec, L'Esprit Bistrot delivers the kind of cooking that makes you reconsider what a neighbourhood restaurant can be. Chef Adrien Comberousse, who sharpened his skills alongside Michelin-starred chefs, now runs the kitchen here, turning out modern cuisine that is both generous and precise. Comberousse describes his cooking as “gourmande, de saison” – rich, seasonal, and built on close relationships with local producers. The menu changes regularly, but the approach stays the same: let the ingredients speak. A starter of octopus and chickpeas from Trept gets a lift from piment d’Espelette and confit lemon. A fine tartlet of crunchy seasonal vegetables comes with a creamy poultry liver mousse and raspberry vinegar dressing. For mains, a roasted veal chop from the Clavisy farm arrives with a fricassée of green beans and girolles, while the pigeon (served half or whole) is prepared two ways – the fillet roasted on the bone, the leg confit – with smoked potato gnocchi and herb pesto. Desserts lean classic: a cherry “nage” in spiced red wine with bay-leaf panna cotta, or a 70% Colombian chocolate mi-cuit that needs ten minutes’ baking time.
The wine list is no afterthought. Bottles like the Morgon Tradition 2023 and Côte Rôtie Maison Rouge 2021 are chosen to complement the food, and the team offers knowledgeable guidance. The setting is simple but comfortable – an air-conditioned dining room with outdoor seating for warmer months, and a private salon for groups.
