The story
At Les Brisants in Bretignolles-sur-Mer, Chef Jean-Marc Pérochon runs a Michelin-starred restaurant that is a true family affair. Awarded its first star in 2014, the restaurant sits directly on the Vendée coast, its dining room and sheltered terrace offering an uninterrupted view of the Atlantic Ocean. This is a restaurant where the sea is not just a backdrop—it is the primary source of inspiration.
Chef Pérochon has been in the kitchen since the age of 15. His cooking is rooted in the Vendée, his native land, drawing equally from the ocean and the garden. He works closely with local fishermen and farmers, and also forages for seasonal plants and seaweeds from the shore in front of the restaurant. The result is a cuisine of character—modern, precise, and driven by the best local produce.
Menus change with the seasons. A lunch menu, "Facing the Sea," offers a concise, elegant introduction to the chef’s style. The longer "Discover the Vendéen Maritime Region" menu unfolds over several courses, featuring dishes like oysters from the nearby Vivier de la Sauzaie with potato and seaweed, or langoustine with fresh goat cheese, caviar, and herb broth. The chef also offers an all-lobster menu for those seeking a deeper dive into the region’s finest seafood.
The restaurant’s wine list, curated with sommelier Jérémy, is a celebration of local vineyards. The Fiefs Vendéens appellation—with its zones of Brem, Mareuil, and Vix—produces fresh, mineral-driven whites and elegant reds that pair naturally with the coastal cuisine. The team regularly hosts wine dinners from November to April, inviting vintners to share their cuvées in an evening of food and conversation.
Jean-Marc runs the restaurant with his wife Josette, and their son Mathieu now works behind the scenes, ensuring the family’s passion for hospitality continues. The atmosphere is refined but warm, the service attentive, and the cooking—a true reflection of the Vendée.
