In the village of La Chaize-Giraud, set between the salt air of Saint-Gilles-Croix-de-Vie and the shores of Lake Jaunay, Maison Brume offers a welcoming escape. The restaurant’s name—meaning “house of mist”—reflects the soft tones of stone and wood that define the space, creating an atmosphere that is both intimate and convivial.
Chef Tanguy Rattier leads the kitchen with a philosophy rooted in locality and seasonality. His modern cuisine draws from the Vendée region’s finest offerings: fresh fish from the nearby coast, produce from local growers like the courgettes of Saint-Hilaire, and Vendée-raised poultry. The menu changes regularly, shaped by the market’s arrivals and the chef’s instincts.
A typical meal might begin with a pea tartlet with faisselle cheese, mint, and bottarga, or flame-grilled sardine with caramelized onions and hibiscus gel. Mains could include a “retour de criée” (the day’s catch) with aubergine caviar and fennel jus, or a poached Vendée guinea fowl breast with roasted jus, black garlic, and sumac-labneh. Desserts range from a chocolate soufflé tart with vanilla ice cream and black-sesame praline to a rhubarb compote with rose cream and strawberries. For those seeking a lighter option, the “Menu du marché” lunch menu is available on weekdays outside holidays and weekends, reflecting the chef’s daily inspirations. The full “Menu Brume” offers a three-course experience for €40, or two courses for €31.
Private dining is possible in the “Les Bosquets” room, which accommodates up to nine guests for celebrations, business events, or group dinners.
