The story
Lisa Roche and Léo Troisgros have opened their wings on La Colline du Colombier, a centuries-old farmstead set on one of the seven hills of Iguerande, in the peaceful Brionnais countryside. Here, asphalt gives way to a gravel lane that leads to a world of its own: the restaurant Le Grand Couvert, the bar-comptoir Le Bois-Mangé, and a handful of lovingly restored lodgings.
The restaurant occupies a vast barn that once sheltered farm machinery, animals, and hay. Its walls – a mosaic of raw earth, pebbles, brick, and materials gathered from the surrounding land – have been left largely as they were. Roche and Troisgros believe in making do with what is, and the space carries the spirit of a place where everything makes sense. The kitchen here is rooted in modern cuisine, working with the seasons as they unfold from spring through winter and back again.
Before or after your meal, the bar at Le Bois-Mangé serves as the welcoming heart of the estate. Under the boughs of an oak tree dappled with light, guests staying on the property can come and go at any hour – to linger, to drink, to nibble, to feel the warmth of the countryside that surrounds Iguerande, Mailly, and Fleury-la-Montagne.
La Colline du Colombier has earned a place on the Michelin guide as a Recommended restaurant, a recognition that speaks to the sincerity and care of the cooking. Roche and Troisgros invite you to taste, to contemplate, to savor – not to weigh the pros and cons of a grey day, but to appreciate the subtle variations of air and light that each season brings.
Beyond the table, the estate offers a range of accommodations, from the golden-stone Tour du Colombier to the quirky Cadoles set on the hillside. Cooking classes are also available for up to eight participants, offering a chance to learn the techniques behind the modern cuisine served at Le Grand Couvert.
