The story

Le Grand Couvert in Briennon: A French Bistro Recognized by Le Fooding

The chef and the kitchen

Under Léo Troisgros, the French bistro kitchen at Le Grand Couvert in Briennon follows a vintage Troisgros philosophy refined through stints in Tokyo, Berlin, and La Grenouillère, earning consistent recognition from Le Fooding as a noted countryside retreat and current listed destination. He approaches the menu as a sequence of deliberate rituals rather than fleeting trends. A silky chilled fennel velouté opens every lunch, finished with toasted almonds, lemon zest, and a whisper of cumin.

Signature plates and seasonal finishes

Pan-fried escargots appear alongside house preserved porcini mushrooms, while tender veal kidneys rest on buttery potatoes with capers and a light sage sabayon. The French cooking balances rich textures with bright acid throughout service. Guests typically finish with an old school baba au rhum that soaks up vodka syrup before meeting a sharp lemon red currant cream and a caramelized sugar crisp. Each plate reflects a careful attention to traditional technique and local sourcing.

The restored stable and surrounding terraces

Architect Patrick Bouchain transformed the original horse stables into a dining room defined by high timber ceilings and a monumental stone fireplace. Glass blade suspension lamps cast a warm glow over long wooden tables. Visitors can step outside to the terrace overlooking the rolling Brionne countryside when the weather permits. The space comfortably accommodates families and groups seeking a relaxed yet polished atmosphere.

Craving vintage Troisgros-style cooking? Head straight over to Iguerande, where the Le Grand Couvert keeps beautiful crowds satisfied. Under the direction of Léo Troisgros (Michel’s 28-year-old son, who has worked at La Grenouillère , and in Berlin and Tokyo), dine in the impressive stable refurbished by Patrick Bouchain (high ceilings, a monumental fireplace, glass blade suspension lamps) or on the terrace with views of the Brionne countryside. For us, the day we went for lunch: a ritual “welcome soup” – a silky chilled fennel velouté with cumin, lemon and almonds; pan-fried escargot with homemade preserved porcini mushrooms, which lacked a little flavor; perfect veal kidneys with potatoes, capers and a sage sabayon; before a voluptuous baba au rhum for the old-school dessert, imbibed with a vodka syrup, served with a lemon-redcurrant cream and a caramelized crisp. // G.D.
