In the quiet village of Briscous, Maison Joanto is the realisation of a dream for Jean-Martin Etcheverry, a local who always wanted to create a true living space. Together with his wife and two sons, he has built a restaurant where the values of family, sharing, and conviviality are at the core of every meal. The atmosphere is relaxed and welcoming, a place where beautiful plates and beautiful bottles come together naturally.
The kitchen focuses on fresh, seasonal, and terroir-driven cuisine, using produce from local farmers. This commitment to quality and simplicity has not gone unnoticed – Maison Joanto earned a place in the Michelin guide for 2026, recognised for its honest, flavourful cooking. A sample lunch menu might feature a classic Andalusian-style tomato gazpacho, a pan-seared beef hanger steak with a wine sauce and gratin dauphinois, and a vanilla blanc-manger with mandarin coulis – a clear reflection of the kitchen's respect for tradition and ingredient quality.
