In Cabourg, Symbiose is the creation of chef Charles-Antoine Jouxtel and sommelière Charlotte Schwab — a Norman and a Provençale whose partnership gives the restaurant its name. The concept is built on two distinct experiences under one roof: a gastronomic restaurant and a more casual tasting bar.
The gastronomic dining room is intimate and softly lit, where chef Jouxtel expresses a creative, seasonal modern cuisine. His dishes are rooted in technique honed during years in three-Michelin-starred kitchens — Arnaud Donckele, Emmanuel Renaut, and Christophe Bacquié — yet they speak with a personal voice.
