The story

L'Intuition d'André, Caen: Modern Cuisine with a Family Story

A Family Affair

At L'Intuition d'André, the name is more than a tribute. André, the family patriarch, always believed he would one day open a restaurant. When his grandchildren began sketching the idea, he charged into the scrum, supporting them to transform the dream into reality. The result is a 24-seat dining room on rue Caponière, where the menu reflects a story rooted in tradition and travel.

The Chef and His Vision

Chef Kim Ortin, a globetrotter from the French West Indies, trained at the Ecole hôtelière in Strasbourg before spending two years in New York. He returned to France, cooking in Paris and the Antilles before settling in Normandy. After two years as head chef at L'Espérance with Stéphane Carbone, he opened his own place. For Ortin, the kitchen is a near-mystical space where magic happens. When service calms, he steps into the dining room to talk with every table. His creed: make his cooking a universal language.

The Setting

The room’s Caen stone walls tell the city’s history, creating a warm and confident atmosphere. Each frame on the wall opens a window to memories, a homage to those who came before. The décor blends modernity and the past, inviting guests to a brief escape.

A Modern Cuisine Rooted in Place

The kitchen serves a cuisine that is both traditional and modern, evolving with the seasons. The chef’s credo is to make every dish a universal language, putting everyone on an equal footing. The menu balances classic dishes rooted in memory with creative, travel-inspired plates. This approach, recognized by the Michelin guide with a Recommended distinction, highlights the restaurant’s commitment to quality and innovation.

Local Partnerships

Ortin works with conscientious artisans: Le potager d’Annie for organic produce, Les petites pousses for microgreens, Profish for seafood, Le moulin des pierres for wood-fired bread, La Lie for organic craft beer, and Michel Bréavoine for cider. The team also sources from Krill for regional meats and Domaine Rolly Gassmann for Alsatian wines.

Sunday Gatherings

On Sundays, the restaurant transforms into a family home. While the rest of the week sees intimate tables, Sunday lunch is reserved for parties of eight or more. The idea is simple: gather the clan, share a meal, and let the flavors taste even better when shared across generations.
