The story
Perched on the hillside of Saint-Médard, overlooking the gentle Vert valley near Cahors, Le Gindreau is the domain of chef Pascal Bardet and his wife, Sandrine. Housed in a former school, the restaurant features a sunlit dining room and a shaded terrace. Here, Bardet crafts a deeply personal, ultra-terrestrial cuisine that draws directly from the Quercy terroir. His modern cuisine is a dialogue between tradition and the present, driven by a passion for seasonality and a commitment to revealing the richness of his native region. This sincere and exacting approach has earned the restaurant a Michelin star, recognizing the high quality of its cooking.
A defining thread of Bardet’s work is his lifelong passion for the black truffle of Quercy. Born from childhood memories of secret truffle hunts with his grandmother, this fascination now shapes the restaurant’s winter identity. Between January and March, Le Gindreau offers a unique truffle experience. Guests can enjoy truffle-infused brunches and multi-course tasting menus, or immerse themselves fully with a morning that includes a traditional country snack by the fire, a visit to the Lalbenque truffle market, and a demonstration of truffle hunting in a truffière. The winter menu itself is a celebration of the Tuber melanosporum, with dishes like an imperfect farm egg rich with truffle, a generously truffled pigeon consommé, and a Jivara chocolate dessert with black truffle ice cream.
Beyond the truffle season, the kitchen follows the rhythm of the year. Spring brings dishes that highlight the first tender shoots, fresh herbs, and new vegetables. Summer menus, like the "Menu Éléments," are organized around the themes of foraging, water, farm, and orchard. A lunch "Menu Partage" offers a more convivial affair. Throughout, the focus remains on the products of local growers, farmers, and foragers, transformed with a light, precise touch that lets the ingredients speak for themselves. The restaurant also hosts an annual "Ban des Vendanges" to celebrate the new wine harvest, a testament to its deep connection to the surrounding Cahors vineyards.
