The chef and the kitchen

Falasca in Calvi anchors its Corsican cooking in a quiet hillside setting just beyond the coast. Chef Jean-Baptiste Moretti brings years of international training to this compact kitchen. His career took him through the lines at Bras, Le Coquillage, and Noma before he returned to the island. He shares the space with Mathilde Macloud, who applies her time at Lecci’s Grand Hôtel de Cala Rossa to guest relations.

A cabin among the hills

The venue sits inside an indoor-outdoor cabin erected on his grandfather’s original farmland. Wooden framing and open terraces face the Balagne mountains, catching light that shifts from bright midday gold to evening shadow. Simple tables fill the space while guests watch the landscape change. A corgi named Biscottu greets every party at the door.

The tasting journey

Diners follow a fixed five-course route called a spassighjata, priced at sixty-eight euros. Each plate builds on seasonal produce drawn from nearby plots and coastal waters. The progression moves steadily from raw preparations to slow-cooked plates that respect traditional Corsican techniques. After winding a few kilometers inland, brace yourself: the oh-so-stunning Falasca is the kind of place that’ll knock you for six. A little hidden paradise seemingly untouched by time (though not all that far from Calvi), this sublime indoor-outdoor cabin overlooks the glorious Balagne mountains shimmering in the golden-hour light. It’s here that cucinaru Jean-Baptiste Moretti (ex-Bras in Laguiole, Le Coquillage in Cancale and Noma in Copenhagen, no less) and his partner Mathilde Macloud (ex-Grand Hôtel de Cala Rossa in Lecci, and all warmth in the dining room) had the brilliant idea of building on his grandfather’s farmland. As dusk settles, the duo orchestrate a gem of a five-course menu a spassighjata , a steal at €68. Kudos to Biscottu, the corgi maître d’, adding yet more pedigree to an already spectacular tavern. · S.L.
