The story
On the port of Cancale, looking out over the Baie du Mont Saint-Michel, L'Ormeau is the restaurant of Hôtel Le Continental. Chef Christophe Wasser and his second de cuisine, Ghislain Flessel, build their menu around what is caught, foraged and farmed within fifty kilometres: local oysters and mussels, shellfish from the bay, and agneau des prés salés from the salt meadows that line the coast.
The kitchen’s approach is direct and seasonal. Steamed coquillages farcis à la persillade, whole spider crab served simply décortiquée, ormeaux from the Baie d’Erquy – the dishes let the raw product speak. Desserts are made in house, including the profiteroles “Tout Caramel” and a full range of house-made ice creams and sorbets. This is seafood cooking that respects the source, with no unnecessary fuss.
L'Ormeau’s recognition in the Michelin guide reflects the precision and consistency of this kitchen – a Recommended restaurant that earns its place through daily attention to product and technique. Takeaway is available for those who prefer to eat on the rocks above the harbour.
Breakfast is also served in the same dining room, a buffet with a view of the water. The restaurant is wheelchair accessible, with outdoor seating on the port when the weather allows.
