The story
In the pedestrian heart of Capbreton, at 26 rue du Général-de-Gaulle, La Cuisine brings together Isabelle and Johann Dubernet, a couple whose shared passion drives every plate. The atmosphere is deliberately intimate – a small, welcoming space where the focus stays squarely on the food.
The approach is straightforward: creative modern cuisine built from seasonal, local ingredients. Textures, flavours and colours are balanced with care, and the menu is refreshed very regularly – sometimes weekly, always with the market in mind.
Lunch offers a formule (midweek, not Sunday) that includes an amuse-bouche; a full three-course version runs 35 €. For a deeper experience, the five-course tasting menu (60 €) – two starters, a main, cheese and dessert – is chosen by the chef and served to the whole table.
À la carte starters include a semi-cured bonite croustillant with basil, confit tomatoes and cucumber, or a fish sashimi with soy, wasabi, guacamole and a crunchy breadcrumb. The foie gras, smoked with vanilla and served with Kampot pepper and a cherry compote, is a signature. Main courses feature fish of the day with citrus butter and kimchi, monkfish à l’Américaine with saffron potatoes, or Ibérico pluma marinated bulgogi-style with lemongrass garlic purée and pak choi. Desserts change with the season – cherries three ways with Madagascar vanilla ice cream, or a chocolate choux with macy ice cream and hazelnut. Everything, including the ice creams, is made in house.
The restaurant’s quality has been recognised by the Michelin guide, which lists it as “Recomended”. That recognition reflects the Dubernets’ consistent, no-fuss dedication to modern cuisine – and the steady stream of regulars who reserve well in advance (booking is strongly advised, by phone only).
