The story
On the edge of the calm waters of the Lac d’Hossegor, Les Hortensias du Lac is an Art Deco hotel-restaurant that belongs to the Fontenille Collection. The house cultivates what it calls "luxe simple" – a relaxed, laid-back atmosphere where natural materials and lake views set the tone. The restaurant’s modern cuisine is led by Chef Philippe Moreno.
Originally from Marseille, Chef Moreno spent more than ten years alongside three-Michelin-starred chef Gérald Passedat at Le Petit Nice before bringing his expertise to the Landes. His cooking is grounded in the terroir: the restaurant’s website highlights ingredients from the Landes region, selected for their quality and authenticity.
Each afternoon, from 4 to 5 pm, guests are invited to "Le Goûter du Chef" – a pastry moment that has become a signature of the house. Moreno prepares a local cake daily, offering a sweet introduction to the region’s gastronomy. For those who want to go deeper, he also offers cooking classes focused on an iconic local pastry, guiding participants step by step.
The restaurant has earned a Michelin recommendation, a sign of its consistent quality and thoughtful approach. The setting is informal yet elegant: terraces overlook the lake, and the dining room reflects the same understated charm. The cuisine is modern, but the flavours stay rooted in the Landes.
