The story
Since 2016, Brasserie à 4 Temps has brought the spirit of a great Parisian brasserie to the heart of Carcassonne. Conceived by double Michelin-starred chef Franck Putelat – a Meilleur Ouvrier de France and Bocuse d’Or silver medalist – the restaurant is a refined, welcoming space where the kitchen’s ambition is rooted in generosity and authenticity. The recently renovated dining room, with its velvet banquettes and a new glass-roofed extension, sets the stage for a bistronomic experience that runs from early morning until late evening.
The menu changes with the seasons and is structured around a simple, elegant idea: four starters, four seafood dishes, four meat dishes, and four desserts. Alongside these, a handful of “incontournables” reimagine regional classics – including the local cassoulet – with a lighter, more gourmet touch. Tapas to share round out the offering. The wine list is a deep dive into Languedoc and Roussillon, with a strong selection of domaine bottlings that reflect the terroir.
The restaurant is open continuously from 6:30 am to 10:30 pm, covering breakfast, lunch, afternoon tea, and dinner – the four times that give the brasserie its name. This all-day rhythm, combined with a relaxed yet polished atmosphere, makes it a natural choice for everything from a quick petit déjeuner to a leisurely evening meal.
