The Chef and His Philosophy

At La Barbacane, within the walls of the Cité de Carcassonne, chef Jérôme Ryon leads the kitchen with a precise, creative hand. A winner of the Prix Culinaire International Pierre Taittinger in 2005, Ryon brings a rigour honed over decades. Originally from Bourg-en-Bresse, he has been an Occitan by adoption for more than 22 years, building close ties with local farmers, market gardeners and breeders. The result is a cuisine that is both readable and generous – balanced, harmonious, with a touch of audacity.

A Cuisine Rooted in the Region

The menu changes regularly, shaped by the best that the land and sea offer. Ryon’s cooking is a dialogue between technique and imagination, always anchored in seasonality. The Classic Cuisine of La Barbacane is expressed through dishes such as blue crab from the Mediterranean with extra-fine green beans, roasted monkfish from Port-la-Nouvelle, or kid goat from Combebelle with a seven-hour leg and a garden of Aude vegetables. Each plate is a clear, honest tribute to the product.

The Dining Experience

The restaurant’s interior is described as “chic and cosy” with a period decor that speaks of elegance. A meal at La Barbacane can be a swift lunch (the Menu Déjeuner includes water, two glasses of wine and coffee) or a longer evening affair with the Menu Dégustation – eight services that take between two and a half to three hours. The wine pairing, curated by head sommelier Fabrice Longo, features four regional selections. The bread is made in-house, and pastry chef Régis Chanel brings a refined, traditional touch to desserts.

Michelin Recognition

La Barbacane received its first Michelin star in March 2002 and has maintained that level of excellence. It is now listed as a Michelin Recommended restaurant, a testament to the consistent quality of Ryon’s cooking and the team’s dedication.
